Worlds Best Chicken Fajitas
One of our family’s all-time favorite meals is quick and easy chicken fajitas. Chicken breasts that are tender and juicy, fresh peppers and onions that are crisp, and a simple homemade seasoning that is combined with all of these ingredients before being heaped high in tortillas.
If you make these Chicken Fajitas exactly as they are stated, you will be consuming a nutritious meal. This recipe’s filling for the fajitas is absolutely nutritious, consisting of lean chicken, fresh peppers, and homemade spices, along with a touch of olive oil. Because I like the taste, I always make sure to accompany them with corn tortillas when I serve them.
In lieu of sour cream, I will sometimes use low-fat cheese or even Greek yogurt as a topping for them. Fill them to the brim with crunchy lettuce, luscious tomatoes that are bursting with juice, and fresh jalapenos.
Ingredients
Three chicken breasts in total
1 onion, medium in size
1 lime
3 bell peppers in any of the following colors: red, yellow, green, or orange
Three tablespoons of olive oil, portioned out
1 teaspoon of ground chili peppers
½ teaspoon smoked paprika
1/2 milligram of onion powder
1/2 milligram of ground black pepper
12 teaspoon cumin, salt to taste if desired, optional
Instructions
To prepare, thinly slice the onion, then cut the peppers into strips.
In a separate bowl, mix together one tablespoon of olive oil, the juice of one-half of a lime, chili powder, paprika, onion powder, black pepper, cumin, and salt. To prepare the chicken, first cut it into strips, then toss it with the spice mixture.
Warm up one tablespoon of olive oil in a pan over medium-high heat. After adding half of the chicken, simmer it for approximately three to five minutes, or until it is almost done. Take out of the pan and put to the side. Continue in this manner with the remaining chicken.
Remove the chicken to a separate plate, then add one tablespoon of oil to the pan. After thoroughly draining the onions (or soaking them, see the remark below), sauté them for two minutes. After adding the pepper slices, continue to simmer for another two minutes, or until the peppers are just warm. Return the chicken to the pan and toss it to blend all of the flavors.
Additional lime juice should be squeezed over the top, and the dish should be served over tortillas.
