Ingredients:

For the Meatloaf:

  • 1 tablespoon vegetable oil
  • 1 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1 garlic clove, minced
  • 2 large eggs, lightly beaten
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup ketchup
  • 3/4 cup milk
  • 2/3 cup quick-cooking oats
  • 1 1/2 pounds ground beef

For the Glaze:

  • 1/2 cup ketchup
  • 1/2 teaspoon hot pepper sauce (optional)
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×5-inch loaf pan.
  2. Heat the vegetable oil in a skillet over medium heat. Add the chopped onion, bell pepper, and garlic. Sauté until the vegetables are softened, about 5-7 minutes. Remove from heat and let it cool slightly.
  3. In a large mixing bowl, combine the sautéed vegetables, beaten eggs, dried thyme, salt, black pepper, ketchup, and milk. Mix well.
  4. Stir in the quick-cooking oats until evenly distributed.
  5. Add the ground beef to the bowl and mix until all the ingredients are combined. Be careful not to overmix, as it can result in a tough meatloaf.
  6. Transfer the meat mixture into the prepared loaf pan, shaping it into a loaf shape.
  7. In a small bowl, mix together the ingredients for the glaze: ketchup, hot pepper sauce (if using), brown sugar, and Dijon mustard. Spread the glaze evenly over the top of the meatloaf.
  8. Bake the meatloaf in the preheated oven for 1 hour, or until cooked through and the internal temperature reaches 160°F (71°C).
  9. Once done, remove the meatloaf from the oven and let it rest for a few minutes before slicing.
