Ingredients:
For the Meatloaf:
- 1 tablespoon vegetable oil
- 1 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 garlic clove, minced
- 2 large eggs, lightly beaten
- 1/2 teaspoon dried thyme
- 1 teaspoon salt

- 1/2 cup ketchup
- 3/4 cup milk
- 2/3 cup quick-cooking oats
- 1 1/2 pounds ground beef

- 1/2 teaspoon hot pepper sauce (optional)
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
Instructions:
- Preheat your oven to 375°F (190°C). Lightly grease a 9×5-inch loaf pan.
- Heat the vegetable oil in a skillet over medium heat. Add the chopped onion, bell pepper, and garlic. Sauté until the vegetables are softened, about 5-7 minutes. Remove from heat and let it cool slightly.
- In a large mixing bowl, combine the sautéed vegetables, beaten eggs, dried thyme, salt, black pepper, ketchup, and milk. Mix well.
- Stir in the quick-cooking oats until evenly distributed.
- Add the ground beef to the bowl and mix until all the ingredients are combined. Be careful not to overmix, as it can result in a tough meatloaf.
- Transfer the meat mixture into the prepared loaf pan, shaping it into a loaf shape.
- In a small bowl, mix together the ingredients for the glaze: ketchup, hot pepper sauce (if using), brown sugar, and Dijon mustard. Spread the glaze evenly over the top of the meatloaf.
- Bake the meatloaf in the preheated oven for 1 hour, or until cooked through and the internal temperature reaches 160°F (71°C).
- Once done, remove the meatloaf from the oven and let it rest for a few minutes before slicing.
