1 big egg (55-60g / 1.9-2oz)
3 cups flour , plain / all purpose
3/4 tsp baking powder
3/4 tsp salt

Instructions

Prepare the oven by preheating it to 180 degrees Celsius (or 350 degrees Fahrenheit), with the fan set to 160 degrees Celsius. Prepare for baking by lining two baking pans with parchment paper. In a large bowl, mix together the butter and sugar until smooth (1 minute on speed 5)

After adding the egg and vanilla, continue beating until everything is well incorporated.
Add flour, baking powder, and salt. Begin by gradually incorporating the flour, and continue to beat until all of the flour is integrated — the mixture will be lumpy.

Flour the surface of the work area, and scrape the dough out of the bowl. Combine all of the ingredients, then divide them in half and pat into two discs. If you want your cookies to be thinner and crunchier, roll out the dough to a thickness of 0.3 centimeters (or 1/8 inch), but if you want them to be thicker and chewier, roll it out to 0.6 centimeters (or 1/4 inch).

To cut out forms using cookie cutters, you may use a knife or a spatula, and then transfer the shapes to baking sheets that have been previously prepared. (Place the dough in the refrigerator if it is too large to fit in the oven.)

Bake for ten minutes, switching the trays halfway through (Note 2), or until the top is light golden in color and the edges are just starting to become light golden. Cookies should be allowed to cool completely on the pans (they will finish cooking on the trays).
