Ingredients:

1 lb ground breakfast sausage (pork or turkey)

  • 1 chopped onion

  • 1 box of thawed frozen shredded hash browns (30 oz)
  • 2 cups of cheddar cheese, shredded
  • 8 eggs
  • 1 cup of milk
  • 1 tsp salt

  • 1/4 tsp paprika (optional)
  • Grease with cooking spray or butter.

Directions:

  1. Set your oven to 350°F (175°C). Coat a 9×13-inch baking dish with cooking spray or butter.
  2. Cook the ground sausage in a large pan over medium heat until browned and fully cooked, breaking it into crumbs while cooking. Trim any surplus fat if needed.
  3. Combine the diced onion and bell pepper with the sausage in the skillet. Cook while stirring regularly until the veggies are softened, about 5 minutes. Remove off the heat source and place it to the side.

  10. Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
  11. Uncover the casserole after 45 minutes and bake for a another 15-20 minutes until it is firm and the top is golden brown.
  12. After cooking, take the casserole out of the oven and allow it to cool for a few minutes before cutting and serving.
