  • 1 tablespoon cumin
  • 1 cup brown sugar
  • 2 tablespoons smoked paprika
  • 3 tablespoons dried mustard
  • 1 teaspoon salt
  • 1/2 tablespoon fresh ground black pepper
  • 1 cup amber ale

To prepare the brisket, follow these steps:

  • Make a dry rub by mixing the dry ingredients and coat the brisket.
  • Put the brisket in a ziplock bag, squeeze out the air, and seal it.
  • Marinate for at least 24 hours in the refrigerator.
  • Place the brisket in a smoker tray, pour the juices from the ziplock bag over the meat, and smoke for 30 minutes at 135°C (275°F).
  • Spray the brisket with beer occasionally to keep it moist.
  • Wrap the brisket in two layers of thick foil, add a cup of beer, and seal it well.
  • Continue cooking until the internal temperature reaches 93°C (200°F).
  • Use the cooking juice to make gravy.
  • Slice the brisket against the grain and serve.
