- 1 tablespoon cumin
- 1 cup brown sugar
- 2 tablespoons smoked paprika
- 3 tablespoons dried mustard
- 1 teaspoon salt
- 1/2 tablespoon fresh ground black pepper
- 1 cup amber ale
To prepare the brisket, follow these steps:
- Make a dry rub by mixing the dry ingredients and coat the brisket.
- Put the brisket in a ziplock bag, squeeze out the air, and seal it.
- Marinate for at least 24 hours in the refrigerator.
- Place the brisket in a smoker tray, pour the juices from the ziplock bag over the meat, and smoke for 30 minutes at 135°C (275°F).
- Spray the brisket with beer occasionally to keep it moist.
- Wrap the brisket in two layers of thick foil, add a cup of beer, and seal it well.
- Continue cooking until the internal temperature reaches 93°C (200°F).
- Use the cooking juice to make gravy.
- Slice the brisket against the grain and serve.
