  2. Divide the mixture into 8-10 portions, and shape each portion into a long, thin sausage shape around a skewer.
  3. Preheat a grill or grill pan to medium-high heat.
  4. Grill the kofta kebabs for 8-10 minutes, turning occasionally, until browned on all sides and cooked through.
  5. Serve the kofta kebabs hot, with pita bread, lettuce, tomatoes, and yogurt sauce if desired.
