Baked Churros
Ingredients
225ml Water
115g Butter (Unsalted)
½ tsp Vanilla Extract
a level tablespoon of light brown sugar
145 grams of regular white flour
¼ Salt
3 Eggs
For the Purpose of Dusting
115g Caster Sugar
¼ tsp Salt
1tsp Cinnamon
In regard to the Chocolate Ganache
200 grams of unsweetened chocolate
100 milliliters of Double Cream
100ml Whole Milk
45ml Golden Syrup
½ tsp Vanilla Extract
Method
Prepare an oven temperature of 200 degrees Celsius (180 degrees Celsius with the fan on), 400 degrees Fahrenheit, and gas mark 6.
After heating the water, butter, sugar, and salt for the dough until it reaches a simmer, add the flour and continue to beat it with a mixer until you have a dough that is completely smooth and can be shaped into a ball.
Prepare by cooking for one minute over a low heat. Take the pan from the heat and put it to the side.
After beating the eggs and vanilla together, add them to the dough in very small increments until all of the liquid is absorbed and you have a thick paste with elastic properties.
Place the paste in a piping bag fitted with a star nozzle, and use the bag to pipe lines of paste onto the parchment paper, allowing about 3 centimeters of space between each line. Bake for 18 minutes, or until golden, and then turn off the oven and leave the food in there for around 8-10 minutes so that it can dry out.
