Worlds Best BBQ Cheddar Meatloaves

Mini BBQ Cheddar Meatloaves are meatloaves that have been portioned out into individual servings and cooked till sizzling and cheesy perfection. The meatloaves are studded with caramelized onions, cheddar cheese cubes, and BBQ sauce.

INGREDIENTS

1 big sweet onion
1 teaspoon of butter in total
salt
1 pound of lean beef ground
1 egg, whisked
1 teaspoon of Worcestershire sauce (or equivalent)
1/4 cup + 2 Tablespoons BBQ sauce, divided
1/4 cup gluten-free bread crumbs made in the panko style
pepper
2 ounces of cheddar cheese, diced into quarter-inch cubes

DIRECTIONS

Cut onion in half lengthwise, then cut each half into thin slices. Melt butter in a large skillet or pot over medium heat, then add onion and a dash of salt. Cook, stirring every couple of minutes, until onions are golden brown and caramelized, which should take about 20 minutes. Reduce heat if onions start to burn. Set aside to cool slightly; this can be made in advance.

In a large bowl, combine the ground beef, egg, Worcestershire sauce, 2 tablespoons BBQ sauce, bread crumbs, salt, pepper, cheese cubes, and caramelized onions, then mix until just combined. Divide the mixture into 4 portions of equal size, then form into loaves, and place on a foil-lined, non-stick-sprayed baking sheet. Bake for 20 minutes, or until the center is no longer pink, and then serve.
