Worlds Best Rustic Italian Tortellini Soup

I’ve brought another another mouthwatering soup for you to try today. This Rustic Italian Sausage Tortellini soup is one of my favorite soup recipes to make on chilly days in February. The flavors are fantastic, and it has just the right amount of vegetables and fresh pasta to fill you up, as well as just the right amount of spicy Italian sausage to warm you up. I hope you enjoy it as much as I do!

Ingredients

1 pound Italian sausage
1 big onion, chopped
2 garlic cloves, crushed or coarsely chopped, and set aside.
2 cups of fresh cherry tomatoes, halved and the stems removed
1 cup of white beans from a can
1/2 teaspoon dried basil
12 milligram each of ground black pepper and parsley powder (a few pinches of each)
1-2 handfuls of finely chopped fresh kale
6 cups of chicken broth
2 cups of fresh tortellini, chopped parsley, and shaved parmesan cheese to be used as a garnish (optional)

Instructions

Prepare a large soup pot or dutch oven by heating it on the stovetop over medium-high heat.
After the sausage has been added, continue to cook it until it has browned.
After adding the onion and garlic, fresh tomatoes, beans, spices, salt, and pepper, toss all of the ingredients together to incorporate.
Turn the heat down to medium and continue cooking the onions until they become transparent.
After adding the kale, continue cooking the mixture just until the kale starts to wilt.

After adding the chicken stock, cover the pot and bring the liquid to a simmer.
Turn the heat down to low and let it simmer for around twenty minutes.
After adding the tortellini, continue to boil the sauce for another ten to fifteen minutes, or until the tortellini is tender and fully cooked.
To serve, shave some fresh parmesan over the top, and then sprinkle some chopped fresh parsley on top.
